Well it’s time for me to jump right in there! Grab a drink, grab what’s left of that turkey and lets toss it in a pot shall we! This recipe is for one big pot of turkey soup enough to feed 10 plus a bowl or two for the freezer.

This recipe is for one big pot of turkey soup enough to feed 10 plus a bowl or two for the freezer.

First let’s pull out One large pot. I prefer my dutch oven or gumbo pot for this.
No reason to trim the meat on the turkey, get what you want off it and get it ready.
Toss that turkey carcass in there and fill the water 3/4s of the way to the top of the bones.
Bring water to a boil and add 1/4 cup of white vinegar and 1 tbs of sea salt.
Bring to a rolling simmer and cover
Allow to cook covered for 3 hours flipping the carcass over with tongs every half hour while being a bit rough trying to break it down.
Once you have a good solid base let’s strain the pot remove the bones and set it aside.
Cut 2 white onions and one head of garlic toss in pot with 1 cup of butter and fry till onions are soft and translucent.
Add 3 chopped peppers, 4 chopped white potatoes, 3 chopped carrots to the frying butter and allow to steam a bit.
Now pour in the broth and bring to a boil.
Add 4 cups chopped turkey from your leftovers, 1/4 chopped green cabbage 3 sticks chopped celery 2 cups chopped mushrooms,1 tbs oregano, 1 tbs basil and return to simmer.
Cover and cook for 30 mins.
Give it a taste, add sea salt and pepper as needed.
Let cool and serve, or cool off and pour into ziplock bags to freeze.
